Hot Honey Corn
Spicy, sweet, crunchy. Can't stop.
Why this is addictive
Corn in two textures — popcorn for airy crunch, corn nuts for dense crunch — creates something no other trail mix does. Hot honey is the binding idea: sweet enough to keep you eating, hot enough to keep you interested.
Ingredients
For ~7 oz / 200g — scale up proportionally for larger batches.
- 1 cup popcorn plain or lightly salted — pop fresh or use a good bagged version
- ½ cup corn nuts original or chili-lime
- ¾ cup roasted peanuts unsalted
- 2 tbsp hot honey Mike's Hot Honey or make your own: 2 tbsp honey + ½ tsp red pepper flakes, warmed 5 min over low heat
- ⅓ cup dark chocolate pieces 70%+
- ¾ tsp flaky salt
Method

If making your own hot honey: warm honey with red pepper flakes in a small saucepan over low heat for 5 min. Strain or leave the flakes in for more heat. Cool.

Toss peanuts in the hot honey until coated.

Spread on parchment-lined sheet. Bake at 325°F for 12–15 min until the coating is set and slightly tacky. Cool completely.

Combine cooled peanuts with popcorn and corn nuts. Toss gently — you don't want to crush the popcorn.
Note Use a bigger bowl than you think you need. Gentle folding is better than aggressive tossing.

Add dark chocolate pieces. Finish with flaky salt.
What to watch for
Common failure points and how to read the batch.
- Popcorn is fragile — add it last and fold gently. Crushed popcorn is just dusty starch.
- Heat level varies by brand. Mike's is moderate; homemade with extra flakes can be intense. Taste the peanuts before mixing in the rest.
- Best within 1–2 days. Popcorn absorbs moisture from the peanuts and goes soft fast.
- Corn nuts are dense and assertive. Don't overdo them or the mix becomes heavy.
Variations to try
- Add ¼ cup white cheddar popcorn to push further into the cheesy-corn direction.
- A pinch of smoked paprika over the top adds a BBQ note.
- Chili-lime corn nuts instead of original for an extra citrus layer.
