Blueberry Lemon

Why this is addictive

Lemon zest + blueberry is a proven baking combination — citrus acid amplifies berry flavor. Translated to trail mix, it's unexpectedly refreshing, which is almost unheard of in the category.


Ingredients

For ~6 oz / 170g — scale up proportionally for larger batches.

  • 1 cup raw almonds
  • 1 lemon zested — use all of it
  • 1 tbsp honey
  • ¼ tsp salt
  • ½ cup dried blueberries wild blueberries (smaller, more tart) are better if you can find them
  • ¼ cup white chocolate rough chopped
  • 1 tbsp poppy seeds

Method

  1. 01

    Preheat oven to 325°F. Line baking sheet.

  2. 02

    Warm honey until runny. Add lemon zest and salt, stir to combine.

  3. 03

    Toss almonds in the lemon honey until coated.

  4. 04

    Spread on baking sheet. Roast 15–18 min, stirring once.

    Note The lemon oils will bloom in the oven. Your kitchen will smell very good.

    Cool completely on the pan.

    Combine with dried blueberries and white chocolate. Add poppy seeds last and toss gently to distribute.


What to watch for

Common failure points and how to read the batch.

  • Fresh lemon zest only — the flavor comes from the oils in the skin. Bottled juice won't do anything useful here.
  • Dried blueberry quality varies enormously. Wild blueberries are more tart and more interesting. Trader Joe's carries a good version.
  • This is a lighter blend — don't add anything heavy (no dark chocolate, no warming spices) or it loses its character.

Variations to try

  • Swap white chocolate for yogurt-covered cranberries for a tangier creamy element.
  • Add ¼ tsp dried lavender with the lemon zest for a more floral direction.
