Matcha Sesame

Why this is addictive

Matcha has a bitter-earthy quality nothing in the snack aisle uses. Combined with white chocolate's sweetness and black sesame's depth, it creates a flavor profile that's genuinely unfamiliar — and hard to stop eating because of it.


Ingredients

For ~6 oz / 170g — scale up proportionally for larger batches.

  • 1 cup raw cashews
  • 2 tsp matcha powder culinary grade is fine — but avoid dusty, cheap matcha that tastes like dried grass
  • 1 tbsp honey
  • 1 tsp coconut oil
  • ¼ tsp salt
  • ¼ cup white chocolate good quality bar, rough chopped — not chips
  • 2 tbsp black sesame seeds toasted
  • ¼ cup dried cranberries

Method

  1. 01

    Preheat oven to 300°F. Line a baking sheet with parchment.

    Warm honey and coconut oil until just runny. Whisk in matcha and salt until smooth — it should be a deep green paste.

    Note Sift the matcha if your whisk won't break up clumps. Lumpy matcha means uneven coating.

    Toss cashews in the matcha mixture until evenly coated.

  4. 04

    Spread on baking sheet. Roast 15–18 min, stirring once. Cashews should look matte green and smell nutty, not grassy.

  5. 05

    Scatter black sesame seeds over the cashews for the last 3 min of roasting.

  6. 06

    Cool completely — the coating will go from sticky to dry.

    Combine with white chocolate and cranberries.


What to watch for

Common failure points and how to read the batch.

  • Matcha grade matters. Culinary grade is fine, but avoid anything that smells like dried grass — that bitterness won't mellow.
  • The coating can burn at higher temps. 300°F is intentionally low. Check the first batch at 12 min.
  • White chocolate quality is critical here — it needs to balance the matcha bitterness without being cloying. A good Valrhona or Callebaut is worth it.

Variations to try

  • Add a few drops of sesame oil to the glaze for deeper sesame flavor.
  • Dried mango instead of cranberry for a tropical-Japanese direction.
